- 2 tablespoons balsamic vinegar

Instructions
- In a small bowl, whisk together balsamic vinegar, pesto, olive oil, honey, salt, and pepper.
- Season the chicken breasts with salt and pepper. Place them in a gallon size freezer bag. Pour the marinade over the chicken and seal the bag while pressing out as much air as possible. Massage the marinade into the chicken and refrigerate for at least one hour or overnight if time allows.
- Preheat your grill to medium-high heat and oil the grates with spray or brush. Grill the marinated chicken for about 4-6 minutes per side or until fully cooked through based on thickness. Remove from heat and let rest for at least five minutes before slicing.
- In a small bowl, combine Greek yogurt, low-fat milk, pesto, vinegar, granulated garlic, salt, and pepper. Whisk until smooth.
- Place baby spinach on a serving platter or in a bowl. Top with sliced grilled chicken, halved cherry tomatoes, and mozzarella balls. Sprinkle with kosher salt, ground black pepper, and optional basil before drizzling with dressing or serving it on the side.
