  • 3 ears of corn
  • 200 g red grape tomatoes
  • 200 g yellow grape tomatoes
  • 1 ripe avocado
  • ¼ bunch cilantro
  • Salt and pepper (to taste)
  • 2 tbsp olive oil (divided)
  • 2 tsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp maple syrup

Instructions

  1. Preheat your grill or grill pan over medium heat.
  2. Peel and slice red onions thickly; brush with 1 tablespoon olive oil.
  3. Husk corn and lightly brush with olive oil.
  4. Grill corn and onion slices for about 15 minutes until charred and tender; let cool slightly.
  5. Chop grilled onions, dice avocado, and halve grape tomatoes.
  6. In a large mixing bowl, combine corn, onions, avocado, tomatoes, and chopped cilantro; season with salt and pepper.
