  • 6 tbsp cold unsalted butter
  • 2 tbsp desiccated coconut
  • 1 egg
  • 1/2 cup full-fat coconut milk
  • 1/2 tsp vanilla extract
  • 3/4 cup diced mango

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper if desired.
  2. In a mixing bowl, combine flour, salt, sugar, and baking powder.
  3. Cut cold butter into small pieces and mix it into the dry ingredients until it resembles coarse crumbs.
  4. In another bowl, beat the egg and mix in coconut milk and vanilla extract. Combine this mixture with the dry ingredients along with desiccated coconut until just mixed.
  5. Gently fold in diced mango until evenly distributed.
