  • 4 larger ears fresh corn
  • 1 heaping cup halved grape tomatoes
  • 1 cup diced English cucumber
  • 1/3 cup diced red onion
  • 2/3 cup crumbled feta cheese
  • 3 Tbsp finely chopped fresh parsley
  • 2 Tbsp finely chopped fresh basil
  • 1/4 cup olive oil
  • 1 1/2 Tbsp red apple vinegar
  • 1 Tbsp lemon juice
  • 1 1/2 tsp honey
  • 1/2 tsp minced garlic
  • 1/2 tsp each salt and freshly ground black pepper

Instructions

  1. Whisk together olive oil, red apple vinegar, lemon juice, honey, garlic, salt, and pepper in a mixing bowl. Refrigerate while preparing other ingredients.
  2. Boil water in a large pot. Cook corn for 2-3 minutes until tender-crisp then transfer to ice water to cool. Cut kernels from the cobs.
  3. In a large bowl, combine corn kernels with grape tomatoes, cucumber, red onion, feta cheese, parsley, and basil.
  4. Pour the chilled dressing over the salad and toss well to coat evenly.
