Ingredients
- 24 ounces Persian cucumbers
- 1 pint cherry tomatoes, halved
- 1 cup sweet corn
- 1 orange bell pepper, diced
- 1/3 cup diced red onions
- 1/4 cup crumbled Cotija cheese (or plant-based alternative)
- 2 tablespoons minced cilantro
- 2 tablespoons minced mint
- 3 tablespoons extra virgin olive oil
- 2 tablespoons lime juice
- Zest of one lime
- 1 tablespoon red apple vinegar
- 1–2 tablespoons honey
- 1/2 teaspoon garlic powder
- 1/4 teaspoon EACH dried oregano, chipotle pepper, pepper, salt
Instructions
- In a large bowl, combine cucumbers, cherry tomatoes, sweet corn, bell pepper, red onions, Cotija cheese, cilantro, and mint.
- In a separate medium bowl, whisk together olive oil, lime juice and zest, red apple vinegar, honey (to taste), garlic powder, oregano, chipotle pepper, salt, and pepper until well combined.
- Drizzle the dressing over the salad ingredients and toss gently until everything is evenly coated.
- Cover and chill in the refrigerator for 1-3 hours before serving to enhance flavors.
