Ingredients
- 1 pound boneless skinless chicken breasts
- 2 tablespoons canola oil
- Zest and juice of 1 large lime
- 1 tablespoon chili powder
- 1 1/2 teaspoons ground cumin
- 1 clove garlic (chopped)
- 1 jalapeño (chopped, seeds removed for less spice)
- 1/2 teaspoon kosher salt
- 1 large red bell pepper
- 1 large green bell pepper
- 1 large red onion
Instructions
- Cut the chicken into bite-sized pieces and place in a zip-top bag.
- In a bowl, whisk together canola oil, lime juice and zest, chili powder, cumin, garlic, jalapeno, and salt. Pour over the chicken, seal the bag, and marinate in the refrigerator for at least 30 minutes or overnight.
- Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 20 minutes.
- Cut the bell peppers and onion into chunks. Thread marinated chicken pieces onto skewers alternately with vegetables.
- Lightly oil the grill grates and grill kebabs for about 6 to 8 minutes, turning occasionally until the chicken is cooked through.
- Remove from grill and sprinkle with fresh cilantro and additional lime juice before serving.
