- 3 bell peppers
- 1 onion
- 2 cups mushrooms
- 1/3 cup water
- 1/3 cup vinegar
- 1/3 cup vegetable oil
- 5 garlic cloves (minced)
- 1 tsp thyme
- 1 tsp Italian seasoning
- 1 tsp poultry seasoning
- 1 tsp rosemary
- 1 tsp salt
- 1 tsp black pepper
Instructions
- In a mixing bowl, whisk together 1/3 cup water, 1/3 cup vinegar, 1/3 cup vegetable oil, minced garlic (5 cloves), thyme (1 tsp), Italian seasoning (1 tsp), poultry seasoning (1 tsp), rosemary (1 tsp), salt (1 tsp), and black pepper (1 tsp) to create the marinade.
- Cut the chicken into bite-sized pieces and place in a large Ziploc bag. Pour marinade over the chicken and seal. Refrigerate for at least 2 hours.
- Chop the bell peppers, onion, and mushrooms into skewer-friendly pieces while the chicken marinates.
- If using wooden skewers, soak them in water for at least 30 minutes.
- Thread marinated chicken and vegetables alternately onto skewers.
