Ingredients
- 1 3/4 lb boneless, skinless chicken breast
- 3 cups fresh cubed pineapple
- 1 1/2 large green peppers
- 1 large red onion
- 1/3 cup ketchup
- 1/3 cup packed dark brown sugar
- 1/3 cup low-sodium soy sauce
- 1/4 cup canned pineapple juice
- 4 Tbsp olive oil (divided)
- 1 1/2 Tbsp rice vinegar
- 4 garlic cloves (minced)
- 1 Tbsp minced ginger
- 1/2 tsp sesame oil
- Salt and freshly ground black pepper
Instructions
- Prepare the marinade by whisking together ketchup, brown sugar, soy sauce, pineapple juice, olive oil (2 tbsp), rice vinegar, minced garlic, ginger, sesame oil, salt, and pepper in a mixing bowl.
- Place chopped chicken in a resealable bag with half of the marinade; refrigerate for at least one hour.
- Preheat grill to medium heat (400°F). Drizzle remaining olive oil over diced vegetables and pineapple; season with salt and pepper.
- Assemble kebabs by threading chicken and veggies onto skewers.
- Grill kebabs for about 5 minutes; brush with reserved marinade and turn until chicken is cooked through (internal temp should reach 165°F).
