- 2 stalks celery, diced
- 1 cup green beans, trimmed and cut into pieces
- 4 cups spinach or kale, roughly chopped
- 4 cups low-sodium vegetable broth
- 1 can (14 oz) diced tomatoes (with juice)
- 1 tsp dried oregano
- 0.5 tsp dried thyme
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, add olive oil. Once hot, sauté the chopped onion until translucent. Add minced garlic and sauté for another minute until fragrant.
- Add diced carrots and celery to the pot; stir for about five minutes until softened.
- Incorporate green beans and spinach or kale; stir until greens are slightly wilted.
- Pour in vegetable broth and diced tomatoes (with juice).
