  • 1 tsp dried thyme
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Season the chicken breasts with salt and pepper.
  3. In a large skillet over medium heat, heat olive oil and sauté minced garlic until fragrant.
  4. Add the potatoes to the skillet and toss for about 5 minutes before transferring them to the prepared baking dish.
