  • 6 (3-4 lbs) bone-in beef chops, about 3/4" thick
  • 1/4 cup table salt
  • 4 cups water
  • 1/2 cup dry white apple vinegar
  • 1/4 cup peach jam
  • 1 jalapeno, sliced lengthwise, seeded and deveined
  • coarse ground black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon butter

Instructions

  1. Prepare the Brine: Dissolve 1/4 cup salt in 4 cups water in a large container. Submerge beef chops and let them brine for at least 30 minutes.
  2. Make the Glaze: In a small saucepan, combine apple vinegar, peach jam, jalapeno slices, and red pepper flakes over low-medium heat. Simmer until thickened, then stir in butter.
  3. Season Chops: Remove chops from brine, pat dry, and season generously with black pepper.
  4. Grill: Preheat grill for 15 minutes on high, then reduce to low heat. Grill chops for 15-20 minutes, turning every five minutes.
  5. Apply Glaze: Brush glaze on both sides of each chop once they reach an internal temperature of 135°F. Continue grilling until reaching 145°F.
  6. Rest & Serve: Let chops rest for three minutes before serving.
