  • For the cinnamon swirl: 1/2 cup granulated sugar and 1 tablespoon cinnamon

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line a 9×5 loaf pan with parchment paper.
  2. In a large mixing bowl, mix together the shredded zucchini, eggs, vegetable oil, Greek yogurt, and vanilla extract until well combined.
  3. In another bowl, whisk together flour, sugar (3/4 cup), baking powder, salt, and spices. Gradually add this mixture to the wet ingredients.
  4. Stir gently until just combined; avoid overmixing.
  5. Prepare the cinnamon swirl by mixing sugar (1/2 cup) with cinnamon in a small bowl.
  6. Pour half of the batter into the loaf pan and sprinkle half of the cinnamon mixture over it. Add the remaining batter on top and finish with the rest of the cinnamon mix.
  7. Use a knife to lightly swirl through the batter for marbling.
  8. Bake for 60–65 minutes until golden brown and a toothpick comes out clean.
  9. Let cool in the pan for about 10–15 minutes before slicing.
