  • 1 container (5.3 oz.) Pomegranate Greek Yogurt
  • 3 tablespoons Asian Sweet Chili Sauce
  • 3 tablespoons pomegranate juice
  • 2 tablespoons mayonnaise
  • 12 tablespoons apple cider vinegar (depending on how tangy you like it)
  • 1 tablespoon lemon juice
  • 1 tablespoon poppy seeds (optional)
  • 1/4 teaspoon salt

Instructions

  1. In a medium bowl, whisk together all of the dressing ingredients until well combined.
  2. Chill the dressing in the refrigerator while preparing the salad. It can be made in advance and stored for up to five days.
  3. In a large bowl, combine the spring salad mix, sliced pears, cucumber, red bell pepper, red onion, pepitas, pomegranate seeds, and cheese.
  4. If serving immediately, drizzle desired amount of dressing over the salad and toss gently to coat.
  5. For leftovers, keep the dressing separate until ready to serve individual portions.
