  • 1 egg
  • 3 tablespoons melted butter
  • 1 1/2 cups grated sharp cheddar cheese
  • 2 chopped green onions

Instructions

  1. Preheat the oven to 350°F and spray a 9 x 5 inch bread pan with non-stick spray.
  2. Wrap grated zucchini in paper towels and gently squeeze to remove excess moisture.
  3. In a large bowl, mix flour, baking powder, baking soda, and salt.
  4. In a small bowl, combine milk and vinegar to create buttermilk. Then add melted butter and egg; stir until combined.
  5. Add the wet mixture to the dry ingredients and mix gently until just combined.
