Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • 2 tbsp lime juice
  • 2 cups cooked rice
  • 1 ½ cups corn (fresh, frozen, or canned)
  • 1 tbsp butter
  • ¼ cup crumbled Cotija cheese
  • ¼ cup chopped cilantro
  • 1 avocado, sliced (optional)
  • ¼ cup sour cream
  • 2 tbsp mayo
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper (optional)

Instructions

  1. In a bowl, combine olive oil, chili powder, smoked paprika, garlic powder, onion powder, salt, and lime juice to create a marinade. Coat the chicken with this mixture and let it sit for 15–30 minutes.
  2. Heat a cast iron skillet over medium-high heat and cook the marinated chicken for about 5–7 minutes on each side until golden brown and fully cooked (165°F internal temperature). Let it rest before slicing.
  3. In the same skillet, melt butter and add corn; cook until slightly charred (about 3–5 minutes). Season to taste.
  4. For the creamy sauce, mix sour cream, mayo, lime juice, garlic powder, and cayenne pepper in a small bowl.
  5. Assemble your bowl by placing cooked rice at the base, topping with sliced chicken and charred corn. Drizzle with the creamy sauce and garnish with Cotija cheese.
