  • 2 tablespoons cider vinegar
  • 6 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, grated
  • 432 g tin pineapple pieces, drained (reserve the juice)

Instructions

  1. Season diced chicken with salt and pepper, then coat with cornstarch.
  2. Heat vegetable oil in a wok over medium-high heat; fry chicken until golden brown.
  3. Remove chicken and sauté onion and bell peppers in the same pan for 3-5 minutes.
  4. Combine ketchup, cider vinegar, brown sugar, soy sauce, ginger, garlic, and reserved pineapple juice in a bowl; pour into the pan with vegetables.
  5. Return chicken to the pan along with drained pineapple; stir well and cook for an additional 5 minutes.
