  • 2 medium sweet potatoes
  • 3/4 pound lean ground turkey
  • 4 garlic cloves, minced
  • 1 1/4 cup canned crushed tomatoes
  • 1 teaspoon olive oil
  • 1 1/4 teaspoons ground cumin (divided)
  • 1/4 + 1/8 teaspoon salt
  • 1/4 + 1/8 teaspoon ground pepper
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/4 cup grated pepper Jack cheese
  • 2 tablespoons minced flat-leaf parsley

Instructions

  1. Pierce sweet potatoes with a fork and microwave on HIGH for 8-10 minutes until tender.
  2. Cut sweet potatoes in half lengthwise, scoop out the flesh into a bowl, and mash it with olive oil, cumin, salt, and pepper.
  3. In a skillet over medium heat, cook ground turkey until browned. Add minced garlic, chili powder, oregano, paprika, crushed tomatoes, salt, and pepper; stir until mixed.
  4. Fill potato skins with the turkey mixture and top with cheese if desired. Broil for about 30 seconds or until cheese melts.
  5. Garnish with parsley before serving.
