- 1/3 cup white apple vinegar
- 2 cups chopped kale
- 2.5 – 4 cups vegetable or chicken broth
- 1 tablespoon tomato paste
- 1 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
- 1/4 teaspoon red pepper flakes (omit if you don’t like spice)
- 1/4 teaspoon Italian seasoning
- 2 bay leaves
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
Instructions
- Heat olive oil in a large pot over medium heat; sauté finely chopped onion until slightly browned.
- Add minced garlic, diced celery, and chopped carrots; continue sautéing for about 10 minutes until softened.
- Stir in white apple vinegar; cook until most liquid evaporates (about 5 minutes).
- Mix in remaining ingredients except kale; start with 2.5 cups of broth.
- Bring to a boil, then reduce heat to low and simmer covered for 15 minutes.
- Remove bay leaves; blend part of the soup until smooth, then return it to the pot.
- Adjust consistency with more broth if needed; stir in kale and simmer for a few more minutes.
- Taste and adjust seasoning as needed before serving warm.
