- 2–3 tablespoons cold water (as needed)
- 4–5 apples (of choice, cored)
- 3 tablespoons (40g) granulated sugar (brown sugar or coconut sugar)
- 2 teaspoons ground cinnamon
- 1 tablespoon (8g) all-purpose plain flour (or gluten-free flour)
- Dash of lemon juice (optional)
- 2 tablespoons (30g) vegan butter or coconut oil (melted)
- 3 tablespoons (60g) apricot jam (any light-colored jam)
Instructions
- 1. In a mixing bowl, combine the flour and granulated sugar.
- 2. Cut in the chilled vegan butter until the mixture resembles crumbs.
- 3. Gradually add cold water, mixing until the dough comes together.
- 4. Wrap in plastic wrap and chill for at least 30 minutes.
- 5. Preheat your oven to 350°F (175°C).
- 6. Peel and core the apples, then slice them thinly.
