  • 2 teaspoons ground cinnamon
  • 1 tablespoon (8g) all-purpose plain flour (or gluten-free flour)
  • Dash of lemon juice (optional)
  • 2 tablespoons (30g) vegan butter or coconut oil (melted)
  • 3 tablespoons (60g) apricot jam (any light-colored jam)

Instructions

  1. 1. In a mixing bowl, combine the flour and granulated sugar.
  2. 2. Cut in the chilled vegan butter until the mixture resembles crumbs.
  3. 3. Gradually add cold water, mixing until the dough comes together.
  4. 4. Wrap in plastic wrap and chill for at least 30 minutes.
